Neapolitan pizzas cook in 60-90 seconds at temperatures exceeding 450 degrees. This results in a light, soft, foldable & satisfyingly chewy pizza base.

Each pizza is hand-stretched, the use of any mechanical device is not allowed.
The Pizza must be cooked in a wood burning oven, directly on stone.
The crust & base should be charred, accentuating the flavour in the same way a chargrill does.
It will be slightly wet, even "soupy" in the centre, this is perfectly normal & is a result of the fresh ingredients & fast cooking time associated with
